Was in Healdsburg yesterday to hook up with my daughter and 2 grandkids and checked out this place called Journeyman's meats..basically a pork shop and they make all their salamis which I bought 3 of and even had a pizza oven but didn't have enough time to order one..what caught my eye was one of the most beautiful looking hunks of pork I've ever seen..wish I could post a pic... house smoked Ham rolled into inches upon inches of pork and duck fat..very expensive but looks to be worth every penny..can't wait to roast it on Christmas eve..next time I drive down south again this will be my have to stop to place..super friendly folks that know what they are doing..
