Carnitas,rice and black beans.

So we took some *pork baby back's and slow cooked them til they pull.Then get a skillet hot and fry it with a little of the slow cook juice and fat (I like A well seasoned cast iron skillet) til it stops sticking and carmalized to you desire.
*The beans were 2lbs with garlic/onion to taste,1/2tsp cumin,1/2-1tsp powdered hot pepper,1/2tsp salt(we smoke salt),*then some rice fried first til slightly golden then equal parts chicken stock and water to hydrate with an onion or two in strips or diced.
I like to add some of our *green tomato sauce which is the last harvest of tomatos,the green ones right at frost.Then garlic/onion to taste some hot pepper to taste,then we cook to blend,jar and can for later.Goes great with pork and chicken.*Then some melted sharp white cheddar.Yum!1000009063.jpg
